{ Fresh pasta }




















This summer we have done (my boyfriend and I) a wonderful fresh pasta!! 
How to do a delicious fresh pasta:
Place the flour (400 gr) on a board or in a bowl. Make a well in the centre and crack 4 eggs into it. Beat the eggs with a fork until smooth. Using the tips of your fingers, mix the eggs with the flour, incorporating a little at a time, until everything is combined. Knead the pieces of dough together – with a bit of work and some love and attention they’ll all bind together to give you one big, smooth lump of dough! 
Once you’ve made your dough you need to knead and work it with your hands to develop the gluten in the flour, otherwise your pasta will be flabby and soft when you cook it, instead of springy and al dente. 
You have to bash the dough about a bit with your hands, squashing it into the table, reshaping it, pulling it, stretching it, squashing it again. It's a really hard work!!
Then all you need to do is wrap it in cling film and put it in a cool place to rest for at least half an hour before you use it.
Now is time to roll your pasta. Once you've rolled the pasta the way you want it, you need to shape or cut it straight away! Then you cooked it as you prefer!! (in the next post about food I will show you the sauce that we used for this fresh pasta!). Bon apetit!!


 Quest'estate il mio ragazzo ed io abbiamo fatto una pasta fresca spettacolare!!
Come fare una deliziosa pasta fresca: 

Mettete la farina (400 gr) al centro del tavolo a formare un vulcano e aggiungete 4 uova.
Con le mani prendete la farina ai bordi del vulcano e portatela all'interno fino ad amalgamare bene il tutto. Impastate per almeno 15 minuti (vedi foto) piegando la pasta e distendendola con il palmo della mano. E' un lavoro davvero duro! Una volta che la pasta diventa bella liscia e morbida formate una palla e avvolgetela con la pellicola trasparente. Quindi lasciatela riposare in un luogo fresco per almeno un'ora.
Dopo averla fatta riposare potrete cominciare a stenderla usando il mattarello! Dovete lavorare la pasta fino a renderla davvero sottile! Poi prendete un coltello e cominciate a tagliare a striscioline (o come preferite) la vostra sfoglia. Una volta tagliata tutta la pasta, cospargetela con un po' di farina e riunitela tutta insieme. Adesso siete pronte per cuocerla e condirla a vostro piacimento! (nel prossimo post di cucina vi farò vedere il sugo che abbiamo preparato noi!). Buon appetito!!
