{ Irish bread }











 

 This morning I've cooked the Irish bread, my favourite bread! :)

 

What do you need:

300 g of white flour
100 g of integral flour
100 g of kamut flour
350 g of high digestibility milk
1 tablespoon of lemon juice
3 tablespoons of extra vergin olive oil
1 and ½  teaspoon of baking soda
1 teaspoon of sugar
1 and ½ teaspoon of salt

How to do it:

Put in large mixing bowl the flours, the salt, the sugar, tha baking soda and mixture.
Put in another mixing bowl the milk, the lemon juice and the olive oil: mixture and then add everything in the first mixing bowl.
Dust hands with a little flour, then gently knead dough in the bowl just long enough to form a rough ball. If the dough is too sticky to work with, add in a little more flour. Note that the dough will be a little sticky, and quite shaggy. If you over-knead, the bread will end up tough.
Transfer dough to a large, lightly greased cast-iron skillet or a baking sheet with the baking paper.
Using a serrated knife, score top of dough about an inch and a half deep in an "X" shape.
The purpose of the scoring is to help heat get into the center of the dough while it cooks.
Transfer to oven at 220° for 40 minutes covered with the aluminum paper. After 40 minutes take off the aluminum paper and leave the bread in the oven another 10 minutes.
Serve bread warm, at room temperature, or sliced and toasted.
This bread is perfect also for breakfast with marmalade spread on it! Yummy! :)

 Stamattina ho cucinato il pane irlandese, il mio pane preferito!

 

Ingredienti:

300 g di farina bianca
100 g di farina integrale
100 g di farina di kamut
350 g di latte ad alta digeribilità
1 cucchiaio di succo di limone
3 cucchiai di olio extravergine di oliva
1 cucchiaino e mezzo di bicarbonato di soda
1 cucchiaino di zucchero
1 cucchiaino e mezzo di sale

 Preparazione:

In una terrina unire tutti i componenti secchi: le farine, il sale, lo zucchero, il bicarbonato e mescolare.
In un’altra terrina mettere il latte, il succo di limone e l’olio, mescolare e versare sulle farine.
L’impasto deve essere morbido e un po’ appiccicoso, quindi infarinarsi le mani e lavorarlo nella terrina, cercando di creare una palla.
L’importante e lavorare l’impasto il meno possibile, altrimenti si rischia che il pane una volta in forno si gonfi poco.
Formare una palla e posizionarla su una teglia del diametro di cm. 25-28, ricoperta con carta forno.
Formare una pagnotta bassa, appiattendola (deve essere alta circa 3 cm), incidere con un coltello una croce profonda e infornare a 220° per 40 minuti circa, coperta con carta alluminio, quindi scoprire e lasciare in forno per altri 10 minuti, finchè avrà formato una bella crosta dorata.
Servire tiepido o tagliato a fette e tostato.
Questo pane è perfetto se mangiato anche a colazione con della marmellata spalmata sopra! Yum yum! :)
